REHEATING
INSTRUCTIONS

BEFORE YOU BEGIN, allow frozen meat or sides to thaw completely in refrigerator overnight. Allow refrigerated meat or sides to come to room temperature, covered, up to one hour prior to reheating. Our meats & sides are fully cooked and simply need to be brought to serving temperature. Using a conventional oven is the preferred method for reheating.

WHOLE MEATS

BRISKET

Preheat oven to 225°F. Wrap tightly in foil with 3tbsp of beef broth. Heat for one hour, then begin temping every 30 minutes until desired internal temperature is reached.

​Preheat oven to 225°F. Place desired amounts of pats of butter on top of meat and wrap tightly in foil. Heat for 30 minutes & temp every 15 minutes until desired internal temperature is reached.

boston butt

​Preheat oven to 225°F. Wrap tightly in foil. Heat for 45 minutes then begin temping every 20 minutes until desired internal temperature is reached.

ham

​​Preheat oven to 300°F. Leave in pan and cover tightly in foil with 3tbsp of water. Heat for one hour, basting halfway. Begin temping every 20 minutes until desired internal temperature is reached.

chicken

​Preheat oven to 225°F. Wrap tightly in foil. Heat for 45 minutes then begin temping every 20 minutes until desired internal temperature is reached.

turkey

Preheat oven to 300°F. Leave in pan and cover tightly with foil. Heat for 90 minutes, basting every 30 minutes. Begin temping every 20 minutes until desired internal temperature is reached.

chopped brisket & pork

Preheat oven to 225°F. Keep covered in oven safe container. Heat for approximately 20 minutes, then toss, or stir, meat every 10 minutes until desired temperature is reached.

The key is to not over-heat and dry out your meat. Spritzing your un-sauced brisket or pork with a combination of equal parts apple cider vinegar & water will help keep it moist.

Just go low and slow, just like how we cook our meat at the restaurant.

side dishes

BRUNSWICK STEW

Pour into an adequately sized pot and heat on the stove over low to medium heat, stirring frequently, until heated through. If stew is too thick, add a splash of beef broth or water. 

GREEN BEANS

Pour into an adequately sized pot (do not drain) and heat on the stove over medium heat, with a lid on, stirring occasionally until heated through.

BAKED BEANS

​Preheat oven to 300°F. Place in oven safe dish and cover. Heat for approximately 30 minutes, stirring halfway. Beans are ready when they are heated through & bubbly.

MAC N CHEESE

Preheat oven to 350°F. Add a splash of milk (one tbsp of milk per cup of mac-n-cheese) to the mac-n-cheese. Cover with aluminum foil and bake for
about 20 minutes.

Tips of the Trade

Refrigerate, or freeze, your leftovers within 1 hour of serving.
